- 50 g cacao
- 200 g chocolat noir fondu
- 200 g beurre
- 220 g sucre roux

- 20 cl crème liquide entière
- 1 cas miel
- 250 g chocolat noir haché
- 40 g beurre
- Pour le glaçage au chocolat

- 100 g sucre
- 7 cl crème liquide
- 20 g cacao en poudre non sucré
- 4 g gélatine

- LES COQUES AU CHOCOLAT Préchauffer le four à 180°C. Dans un saladier, mélanger les œufs et le sucre. Mélanger au fouet pendant 2 minutes. Faire fondre le beurre quelques secondes au micro-ondes et le verser sur le mélange œufs-sucre. Ajouter la farine, le bicarbonate et le cacao. Mélanger. Ajouter le chocolat fondu avec la crème au mélange précédent.
- LA GANACHE CHOCOLAT Mettre le miel et la crème dans une casserole et porter à ébullition. Dans un saladier, verser la moitié de la crème chaude sur le chocolat haché. Mélanger ensuite avec une spatule, en partant du centre vers l'extérieur, afin d'obtenir une texture brillante. Ajouter la crème restante. Tout en continuant de mélanger, incorporer le beurre coupé en morceaux. Laisser légèrement durcir à température ambiante.
- LE GLAÇAGE CHOCOLAT Dans une petite casserole, faire chauffer l’eau et le sucre. À ébullition, ajouter la crème. Dès la reprise de l’ébullition, ajouter le cacao et fouetter vivement. Cuire à feu doux en fouettant de temps en temps. Hors du feu, ajouter la gélatine préalablement ramollie et essorée. Passer cette sauce au chinois. Ce glaçage est prêt dès qu'il commence à être nappant.
- LA FINITION Déposer un peu de ganache sur la surface plate d’une coque de whoopie et ajuster par-dessus une seconde coque. Répéter ces opérations avec le reste des coques. Déposer les whoopies sur une grille et verser dessus un peu de glaçage fondu. Le p'tit plus. Incorporer des petites billes chocolatées croustillantes dans la ganache afin d'obtenir un effet « crispy » !
