- 100 g sucre
- 50 g farine
- 100 g chocolat noir 65%
- 100 g beurre mou

- Préparation du nappage aux fruits rouges : Mélanger le coulis de fruits rouges et le nappage. Pour une meilleure homogénéisation, il est possible de le mettre 15sec au micro-ondes. Mais attention : il ne faudra pas qu'il soit chaud lors du dressage !
- Dressage : Démouler les brownies et couper la partie qui a gonflé pour avoir un dôme parfait.
- Fouetter la ganache jusqu'à ce qu'elle soit assez ferme pour la pocher. Attention : ne pas trop la fouetter sous peine de voir la crème tourner au beurre !
- Verser la préparation dans une poche a douille avec une douille lisse d'environ 5mm. Pour former la cervelle, tracer un léger trait au couteau sur le dôme pour séparer les deux lobes (facultatif, il s'agit d'une aide).
- Pocher la ganache montée en serpentins pour former la cervelle.
- Enfin, napper délicatement la ganache à l'aide d'une cuillère avec le nappage aux fruits rouges.
