Quand la crème épaissit, éteindre le feu, filmer la crème pâtissière obtenue avec le film fraîcheur et réserver au frais.
  3. Monter 250 ml de crème liquide entière bien froide au batteur. Une fois la crème est prise, rajouter progressivement la crème pâtissière sans cesser le batteur. La crème est prête quand elle est homogène et ferme.
  4. Pour le montage du gâteau, choisir une emporte pièce ronde de 18 cm environ de diamètre pour découper deux couches de génoise.
  5. Mettre la première couche de génoise au fond du moule et disposer les moitiés des fraises sur les bords puis rajouter la crème avec une poche à douille. Disposer les morceaux de fraises sur la crème. Disposer ensuite la deuxième couche de génoise et décorer le dessus par une crème chantilly (j’ai réservé une partie de la crème liquide entière montée pour la décoration) et des fraises.
