- Je laisse refroidir un peu, ici au Québec je profite de mon frigo naturel, dehors, puis j’ajoute les œufs un à un en remuant bien à chaque fois
- Je prépare mon caramel dans le moule, j’ajoute 2 cuillers d’eau de fleur d’oranger au sucre et je fais blondir doucement, sans jamais le quitter des yeux
- Je verse ma préparation dans le moule caramélisé et je place au bain-marie à 350°F/180°C environ 1 heure et 20 mn. Je teste au couteau.
- Laissez bien refroidir avant de démouler sinon il risque de s’écrabouiller (c’est ce qui m’est arrivé en partie !). Et si du caramel reste au fond du moule, ajoutez un petit peu d’eau et chauffez jusqu’à ce qu’il fonde. Aussitôt versez le sur le gâteau
