- Quand la pâte a bien levée, la dégazer en la travaillant. Puis l étaler en rectangle de 30 cm x 40 cm. Étaler la crème pâtissière et les copeaux de chocolat. Rouler en boudin et couper des tronçons de 4 cm.
- Disposer les tranches de brioche dans un plat beurré et dorer a l oeuf
- Couvrir d un torchon et laisser de nouveau lever 45 minutes.
- Cuire a 180 degrés pendant 30 minutes
